The E48960 Non-Electric Pressure Canner is a professional-grade, heavy-duty stainless steel unit designed specifically for pressure canning of all food types. Manufactured from Grade 304 stainless steel, it ensures durability, corrosion resistance, and compatibility with all cooking surfaces, including stoves and gas burners.

With its 103.4 kPa (~15 psi) pressure regulator, this canner achieves a steam temperature of 121°C (250°F), the scientifically recognized temperature required to safely process low-acid foods such as meats, poultry, seafood, and vegetables in glass preservation jars. This high temperature also makes it suitable for sterilization applications, such as preparing mycology substrates and other heat-sensitive materials.

For recipes requiring lower pressure, an optional 80 kPa (~10 psi) pressure regulator is available. The unit’s pressure regulator weights are calibrated for Johannesburg altitude, ensuring accurate pressure control without adjustment at any lower altitude within Southern Africa.

What pressure does the canner operate at?

Our pressure canner is supplied as standard with a 103.4 kPa regulating weight. This pressure is equivalent to 15 psi which is the USDA recommended pressure for canning of meats, poultry and low acid foods. We also supply a 80 kPa weight as an optional extra which offers 10 psi equivalent pressure suitable for canning of high acid foods, fruits and jams.

How many jars will fit into the different capacity canners?

The below provides a comparison of capacity between the different models:

  • The 10-litre canner takes 7 x 500 ml jars
  • The 20-litre canner takes 14 x 500 ml. (stacked) or 7 x 1000 ml. jars
  • The 30-litre canner takes 18 x 500 ml (stacked) or 9 x 1000 ml jars
  • The 40-litre canner takes 27 x 500 ml. (three layers stacked) or 18 x 1000 ml. (stacked) jars

Please note that this is indicative and the actual capacities depend on the dimensions of the specific jars used.

What heat source can the canner be used on?

The canner can be used on an electric hot plate or a gas stove. The canner is not suitable for use on a coal fire. Coal fires are not suitable for canning as they do not offer a safe and reliable means of regulating heat. The canner is manfuactured from Grade 304 Stainless Steel which is non-magnetic. As such, it cannot be used on an induction stove plate.

Where are the canners manufactured and are spares readily available?

Our canners are manufactured locally at our factory in Meadowdale, Johannesburg. We supply a full range of spares and offer after-sales service.

Can the canner be delivered?

We can arrange delivery across Southern Africa. Please provide us with the phsycial address for delivery, and we will ensure to include this when quoting. Alternatively, the canner can be collected from our facility either by yourself or your preferred courier.
